A pivot table allows you to perform the same calculations you would perform to create a Pivot Chart, but displays the results as a table for further data analysis. To create a Pivot Model, click the pivot icon on the result set  or select the Data Analysis->Table->Pivot Model menu as show below.

Like the Pivot Chart, you will need to select the pivot function to use when creating the result set.

The Pivot Model will then be displayed with the calculated column with the same name as the Pivot Function chosen above, the category column and the legend column

The Pivot Model columns will be sorted if the original Result Set columns were sorted.
